Banana Pancake – a simple stay-cation treat

I am born and raised in Africa and when we celebrate having pancakes for breakfast, it is nothing close to the western world’s imagination of pancakes.

So my daughter is a westerner and sometimes I fail to consider that. When she was 4 years old, she was introduced to what I call ‘flat cakes’ which she knows as pancakes – the western version.

She fell in love with it because of course it comes dripping with syrup and that’s exactly what someone with a sweet tooth will easily gravitate towards.

So you can imagine that trying to introduce her to the African pancake was not a much welcomed idea considering that it was less sugary and no syrup allowed.

I knew I needed to do something to spice up the pancake and a friend of mine came to my aid.

She suggested that I could add ripe bananas to the flour mixture for a sweeter taste. Who knew that one banana was all I needed to turn over staycation into an unforgettable family time..
